Meatless mince chilli boats


A classic or an all-time favourite - it's our chilli with a twist. Incredibly easy to make. Even easier to enjoy.

 Ingredients:  Method:

 - 400g meatless mince

 - Taco spice mix; (if you’re feeling adventurous and have the spices in, give this mix a try, only 5 cals a serving, if not use an Old El Paso spice mix you cant go wrong!)
 - ½ tbsp chilli powder
 -  ¼ tsp garlic powder
 - ¼ tsp onion powder
 - ¼ tsp oregano
 - ¼ tsp paprika
 - 1 tsp ground cumin
 - ½ tsp salt & black pepper

 - 1 tin chopped tomatos 

 - 1 tin kidney beans

 - 1 red onion – finely sliced

 - 1 red chilli – finely sliced 

 - 2 radish – finely sliced

 - 1 lime

 - 1 pack of Old El Paso stand n stuff boats (if you don’t have any, throw this in a wrap or a taco shell, it tastes just as good!)

  1. Heat 1 table spoon of your favourite oil in a large saucepan over a medium heat.

  2. Add the onions and cook  for 5 minutes or until they start to soften.

  3. Add the peppers and spice mix and cook for another 2 minutes. 

  4. Tip in the chopped tomatoes and kidney beans, stir through and cook for 5 minutes.

  5. Add the meatless mince, stir through and cook for 8-10 minutes.

  6. Spoon the taco mix into the boats, dress with a couple of fresh chilli’s, radish and a little squeeze of fresh lime (a dollop of mayo or sour cream is optional but recommended!).

  7. Enjoy.
